The present invention discloses a method of freezing and drying round leaf grape, which includes several steps, such as harvesting, cleaning and disinfection, high pressure pretreatment, prefreezing, freeze drying, and impurity removal and distribution. Timely collection to ensure the optimum balance between the shape hardness of the product and the flavor of the solid after the freeze drying; the high temperature weak alkali solution perms the skin, destroys the surface waxy layer and enhances the permeability of the skin cells; the high pressure breakdown discharge further destroys the water permeability of the epidermal cell wall of the fruit, and forms large ice crystals during the slow freezing process. The fruit cells promote the formation of intercellular pores; in the process of freeze drying, directed direct current high pressure electricity is used to promote the melting of ice crystals and to give the kinetic energy of the diffusion of the deep water molecules. The invention can not only speed up the freeze-drying speed of the round leaf grapes, shorten the freeze drying time by 10 ~ 20%, but also maintain the pleasing fragrance, fruit aroma and fresh flavor of the round leaf grape.
